African Chicken & Peanut Stew

Who doesn’t like chicken and who doesn’t like peanut butter? Well, atleast for me, the combination of the two is my favourite. This African Chicken & Peanut Stew, a specialty in West Africa, is packed with flavour. A sprinkle of roasted and roughly chopped peanuts for garnish gives it a crunch. Pair this dish with some steamed Basmati Rice for a complete dinner.

Ingredients

3 tbsp oil
1 large onion, chopped
1 tbsp ginger-garlic paste
1 1/2 tsp cumin powder
1 tsp chili powder
2 stock cubes
Salt & pepper to taste
1 tbsp water
1 sweet potato, cut into cubes
4 chicken drumsticks
1 can tomatoes
1/2 cup peanut butter mixed with 1/4 cup boiling water
1/4 cup crushed peanuts
1 cup boiling water
Chopped coriander leaves and peanuts for garnish
Serve with steamed Daawat Basmati Rice

Instructions

Heat oil in a pot and sauté onions for 1-2 minutes or until translucent.

Add ginger-garlic paste, cumin powder, chili powder, stock cubes, salt and pepper and stir for 30 seconds.

Add water and let cook for 1-2 minutes until the spices are fried well.

Stir the sweet potatoes, chicken, tomatoes, peanut butter (mixed with boiling water), peanuts and 1 more cup of boiling water into the base.

Cover the pot with a lid and let simmer for 30-35 minutes or until the chicken is well cooked.

Garnish with chopped coriander leaves and a sprinkle of roughly chopped peanuts.
