Apricot Baby Food – Apricot Chicken & Sweet Potato (6-9 Month Baby)

Ingredients:
- 1 tbsp sunflower oil
- 40g chopped onion
- 2 chicken thigh fillets (approx 175g), trimmed and cut into pieces
- 200g sweet potato, peeled and chopped
- 8 dried apricots, chopped
- 400 ml chicken stock
Method:
Heat the oil in a pan and saute the onion for 4 minutes or until softened but not coloured.Add the chunks of chicken thigh and sauté for about 2 minutes.Add the sweet potato and sauté for one minute.Add the chopped apricots and pour over the chicken stock.Bring to the boil, then cover and simmer for about 15 minutes or until tender.Blend to a puree.

I am on a diet and have been really good, but i just fancy something like pork chop with mash potato or shepherds pie or something along these lines. But i want to be able to make it cheaply and i dont want it to take ages of prep and it must be no more than 500 cals max.
Suggestions welcome xx
Should add, dinner for 1, but if more than 1 portion can save it

I am cooking chilli mango chicken and the recipe ask for peanut oil and sunflower oil, but i only have vegetable oil and olive oil, can i use them?
