BBQ Chicken Salad with Creamy Avocado Dressing

    A BBQ chicken salad with tomatoes, corn and black beans all dressed up in an amazing avocado dressing.

    Ingredients:

    • 4 small chicken breasts
    • salt and pepper to taste
    • 1/2 cup BBQ sauce
    • 6 cups lettuce, sliced or torn
    • 1 cup cherry tomatoes, sliced in half
    • 1 cup corn
    • 1 cup black beans, drained and rinsed
    • 4 strips bacon, cut into 1 inch slices and cooked (optional)
    • 1/4 cup cilantro, torn
    • 1/4 cup avocado dressing(see below)

    Method:

    1. Season the chicken with salt and pepper and grill over medium-high heat until cooked, about 4-6 minutes per side basting the chicken in the BBQ sauce as you go.
    2. Let the chicken cool a bit and slice.
    3. Assemble salad and enjoy!

    Creamy Avocado Dressing (aka Guacamole Buttermilk Dressing)

    A cool and creamy avocado dressing with tangy buttermilk, fresh cilantro and lime juice along with some spicy jalapeno pepper.

    Ingredients:

    • 1 medium avocado
    • 1 small jalapeno
    • 1/4 cup cilantro
    • 1 lime, juice
    • 1 green onion
    • 1 clove garlic
    • 3/4 cup buttermilk
    • 1/4 cup mayonnaise (completely optional)
    • 1/2 tsp cumin seeds, toasted and ground
    • salt and pepper to taste

    Method:

    Puree everything in a blender until smooth. Store in fridge and finish within a few days.

      I am looking for easy vegetarian recipes?
      i am shopping today and have been vegetarian for 7 years and want to try something new and different but that also can be quick do to i am babysitting all day and don’t have much time to do things except at night

      Im starving now……and im really lazy……so any ideas? Im pretty open minded but like no meat or like eggs or fish. I do have tofu. Im not in the modd for pasta unless you give me a really good pasta recipe like under 20 minutes :D

      I have majority of any meat, but I have chicken breast (boneless skinless) already thawed in the fridge so looking for something to fix a great meal tomorrow night with. I love to try new things and these are normally on the menu so something new and fun and exciting to try:

      Chicken parmigiana
      Chicken alfedo
      Fried chicken
      chicken piccata
      BBQ chicken
      Buffalo chicken sandwiches or tenders
      baked chicken

      Any suggestions will be taken in consideration =)

      Hi guys. I’m trying to begin a vegan diet from a vegetarian one and I want to lose about 30lbs (I’m 5’3″ and 167lbs). The only thing is I am a pretty horrible cook, not creative with food, and just don’t really know how to get my daily values out of some apples and a salad…that and I get hungry and start snacking on non-vegan crap!

      So what I really need is a link to or some ideas of quick and simple vegan meals. I already make a good deal of smoothies, so anything other than that. :) Thanks so much in advance!
