Blackened Catfish Tacos

A Southern take on tacos with blackened fish and a spicy remoulade sauce.

Ingredients:

  • 1 pound catfish or other white fish
  • 1/4 cup melted butter
  • 2 tablespoons creole seasoning (see below)
  • 8 (6 inch) tortillas
  • 2 cups lettuce, shredded
  • 1 cup pico de gallo (see below)
  • 1/4 cup remoulade sauce (see below)
  • hot sauce to taste

Method:

  1. Heat a cast iron skillet over medium-high heat.
  2. Dip the fish into the butter, sprinkle on the seasoning and pat it in.
  3. Place the fish in the skillet and cook until it just starts to blacken but not burn, about 2 minutes, flip it and do the same to the other side.
  4. Assemble tacos and enjoy.

Remoulade Sauce

(makes 1/2 cup)

Ingredients:
1/4 cup mayonnaise
1 tablespoon creole mustard
1 tablespoon ketchup
1 teaspoon horseradish
1 small clove garlic
1 tablespoon lemon juice
1 teaspoon capers
1 green onion (chopped)
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
hot sauce to taste
Method:

1. Blend everything in a food processor until smooth.

Creole Spice Blend

(makes 4 tablespoons)

Ingredients:
2 1/2 teaspoons paprika
2 teaspoons salt
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon black pepper
1 teaspoon cayenne pepper
1 teaspoon dried leaf oregano
1 teaspoon dried leaf thyme

Method:
1. Mix everything.

Pico de Gallo

(makes 2 appetizer sized servings)

Ingredients:

2 cups tomatoes (seeded and chopped)
1/4 cup onion (chopped)
1 jalapenos (seeded and chopped)
1 clove garlic (chopped)
1 lime (juice)
1 handful cilantro (chopped)
salt and pepper to taste

Method:
1. Mix everything.

    I got a ton of frozen crab cakes on an amazing sale during Lent, and they expire really soon. Besides just serving them with a side, what can I do with them? They’re Mrs. Paul’s if that helps with knowing the breading type and such.
