Carrot Cake with Homemade Frosting

Top this dense carrot cake with homemade cream cheese frosting — a classic crowd pleaser!

Unsalted butter, for the pan
12 ounces, approximately 2 1/2 cups, all-purpose flour, plus extra for pan
12 ounces grated carrots, medium grate, approximately 6 medium
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/4 teaspoon freshly ground nutmeg
1/2 teaspoon salt
10 ounces sugar, approximately 1 1/3 cups
2 ounces dark brown sugar, approximately 1/4 cup firmly packed
3 large eggs
6 ounces plain yogurt
6 ounces vegetable oil
Cream Cheese Frosting, recipe follows


Preheat oven to 350 degrees F.

Butter and flour a 9-inch round and 3-inch deep cake pan. Line the bottom with parchment paper. Set aside.

Put the carrots into a large mixing bowl and set aside.

Put the flour, baking powder, baking soda, spices, and salt in the bowl of a food processor and process for 5 seconds. Add this mixture to the carrots and toss until they are well-coated with the flour.

In the bowl of the food processor combine the sugar, brown sugar, eggs, and yogurt.

With the processor still running drizzle in the vegetable oil. Pour this mixture into the carrot mixture and stir until just combined. Pour into the prepared cake pan and bake on the middle rack of the oven for 45 minutes. Reduce the heat to 325 degrees F and bake for another 20 minutes or until the cake reaches 205 to 210 degrees F in the center.

Remove the pan from the oven and allow cake to cool 15 minutes in the pan. After 15 minutes, turn the cake out onto a rack and allow cake to cool completely. Frost with cream cheese frosting after cake has cooled completely.

Cream Cheese Frosting:

8 ounces cream cheese
2 ounces unsalted butter, room temperature
1 teaspoon vanilla extract
9 ounces powdered sugar, sifted, approximately 2 cups

In the bowl of a stand mixer with paddle attachment, combine the cream cheese and butter on medium just until blended. Add the vanilla and beat until combined. With the speed on low, add the powdered sugar in 4 batches and beat until smooth between each addition.

Place the frosting in the refrigerator for 5 to 10 minutes before using.

Yield: approximately 2 cups

    I made a cake with cream cheese frosting for my mom’s birthday today, but I dont know if i refrigerate the cake because it has cream cheese in it. Is it okay to leave it sitting out?

    I’m making a Victoria sponge with a twist. It is going to be red white and blue, red for the top layer. Then the cream cheese frosting and the last layer will the blue.

    I won’t be using any dark ingredients so it should go the desired colour. I’m hoping it will do.

    I need the ingredients and method of how to make cream cheese frosting, please help me would be much appreciated.

    For a carrot cake I just made. I would like to decorate the cake with little carrots, and I’m wondering if I put food coloring gel in the cream cheese frosting, would that ruin it?

    The frosting is made of cream cheese, powdered sugar, butter. What do you think?

    I bought some ready-made Golden Marzipan in the hope it would taste like the stuff you get in cakes and so on. Only, it tastes rather nutty and, quite frankly, I don’t particularly like it. How do I get it to taste all sweet and normal like the stuff you get in cakes?? Thanks! x

    Whenever I add wilton gel food coloring to my cream cheese frosting, it becomes too soft. Almost too soft to the point where as if it looks likes it going to melt. Why?! I definitely do not want frosting like this! HELP!

    I need a dog cake recipe but i only have normal ingredients and i can’t go to the store. I don’t have any whole wheat flower or wheat germ but i do have normal flower and baking soda and powder and stuff.     I told my husband and kids that I would make a cake tomorrow but I can’t figure out what to make. They asked for something with cream cheese frosting but they’re tired of both carrot cake and red velvet cake. I can’t think of anything else that goes with cream cheese though. Any ideas?
    It doesn’t have to be an actual cake- cupcakes or other baked goods/desserts are fine so long as they’re frostable:D
    Oh also not plain white/yellow cake. If it’s flavored that is good though

    I made some pumpkin bread..5 mini loafs and 1 regular loaf. I also have some cream cheese that i need to get rid of so i was hoping to drizzle some cream cheese frosting on the bread. All recipes i find say confectioners sugar but I don’t have any of that. Does anyone know of a good recipe that uses granulated sugar and not many other ingredients (i don’t bake much). Thanks!!

    I am making my sister’s high school graduation party cake. she wanted a chocolate cake with homemade cream cheese frosting. the problem is, it is very hot out for NY and with the 90+ degree temperature, I can’t keep the frosting from melting off. is there anything that I can add to the frosting that has no flavor to add to the frosting so it doesn’t melt at the party? her party is outdoors and the temperature is supposed to be 94 degrees F.
