Chicken Kababs with Peanut Sauce

Chicken kabobs make for an easy, healthy snack or meal, and food on skewers is fun! Kids will love the yummy peanut sauce.

Ingredients:

For the chicken:

  • 12 ounces boneless, skinless chicken breast (about 1 large)
  • 2 tablespoons vegetable oil
  • 2 tablespoons lower-sodium soy sauce

For the peanut sauce:

  • 3 tablespoons creamy peanut butter
  • 2 tablespoons lower-sodium soy sauce
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1 tablespoon chopped scallion greens
  • 1/8 teaspoon garlic powder

Method:

  1. For the chicken: Cut the chicken into 1/4-inch strips across the grain. Lay the strips on a cutting board and gently flatten by pounding with your fist; they will be a variety of shapes and sizes. If some slices are very long (more than three bites), you may need to cut them in two. Place the chicken in a bowl with the oil and soy sauce and turn the chicken in the sauce to coat. Let the chicken marinate at room temperature for at least 20 minutes, or refrigerate overnight.
  2. For the peanut sauce: Combine the peanut butter, soy sauce, lime juice, honey, scallions, garlic powder, and red pepper flakes in a bowl and whisk together.
  3. Preheat a flat griddle over medium heat. Remove chicken from marinade, pat dry, and thread onto skewers; discard the marinade. Place the chicken on the hot griddle so that the skewers are positioned away from the direct heat and cook the chicken until golden brown, 2 to 3 minutes per side. Serve the skewers with peanut sauce for dipping.

    soak meat overnight for a couple of hours
    next day put meat nad water in a large pan and put it in the oven for 3 hours (stir regularly)
    add the cayenne pepper and just a litle bit of salt
    keep stirring until cooked
    add more pepper if needed

    I ALWAYS GO TO THE AFGHAN RESTAURANTS IN NY SUCH AS BAKHTAR, KABUL KEBAB, ETC AND I AM ADDICTED TO THE WHITE SAUCE. CAN ANY ONE PLEASE TELL ME THE RECIPE. I HAVE TRIED RECIPES ONLINE AND IT NEVER COMES OUT THE SAME. I ALSO WANTED TO KNOW WHILE MIXING THE INGREDIENTS CAN I USE A BLENDER OR SHOULD I USE A WHISK? IF ANY CHEF KNOWS THE RECIPE PLEASE LET ME KNOW:)

    I am cooking boneless skinless chicken breast for three and I need things to serve it with. I already am going to have advocado, tomato and garlic bread on the side but I need more idea’s. (Nothing too big because its just me, my brother and my mom. Please note that I am 14 and I can’t cook like a pro.
