Chicken Salad

Ingredients:

  • 4 cups diced poached chicken, recipe follows
  • 1 stalk celery, cut into 1/4-inch dice
  • 4 scallions, trimmed and thinly sliced or 1/4 cup sweet onion cut into 1/4-inch dice
  • 1 1/2 teaspoons finely chopped fresh tarragon or fresh dill
  • 2 tablespoons finely chopped parsley
  • 1 cup prepared or homemade mayonnaise
  • 2 teaspoons strained freshly squeezed lemon juice
  • 1 teaspoon Dijon mustard or regular mustard
  • 2 teaspoons kosher salt
  • Freshly ground black pepper
Method:
  1. In a mixing bowl, toss together the chicken, celery, scallions and herbs. Set aside.
  2. In a small bowl, whisk together the mayonnaise, lemon juice, mustard, salt and pepper to taste. Add to the chicken and mix gently until combined. Refrigerate until ready to serve.

Cook’s Note: Serve on a bed of lettuce with sliced tomatoes, in half an avocado or in a chicken club sandwich made with artisanal bread, crispy smoked bacon, vine-ripened tomatoes and lettuce.

POACHED CHICKEN FOR SALADS

Ingredients:
  • 10 sprigs parsley
  • 2 sprigs fresh thyme
  • 1 small onion, halved
  • 1 small carrot, halved
  • 1 stalk celery, halved
  • 3 pounds chicken breasts halves, on the bone and fat trimmed
  • 5 to 6 cups chicken broth, homemade or low-sodium canned

Method:

  1. Put the parsley, thyme, onion, carrot, celery, and chicken breasts in a medium saucepan. Cover with the broth, and bring just to a boil. Lower the heat to very low and cover. Poach the chicken for 20 minutes or until firm to the touch. Remove the pan from the heat, uncover, cool the chicken in the liquid for 30 minutes.
  2. Transfer the chicken to a cutting board and reserve the liquid. Bone and skin the chicken and cut the meat into 1 inch cubes. Discard the bones and skin.
  3. Strain the broth and store, covered, in the refrigerator for 3 days or freeze for later use. Remove any fat from the surface of the broth before using. Yield: 4 cups cubed chicken or 4 to 6 servings

    Im going on a diet but chicken salad is one of my absolute FAVORITE foods so i was wondering if anyone knows any fat free or low fat recipes. oh by the way im cutting down on calories so i dont know if that makes a difference lolz

    I do not like sweet chicken salad or the kind that has relish in it. I like chunks of chicken salad, but for some reason I can never get it to taste as good as some deli’s.
    I am looking for the chicken salad that you put on a sandwich.

    Im having chicken salad tonight cos im trying to loose a bit of weight (wich i dont really think is going to happen!)
    so id like a dressing/sauce for it.
    I diont really thing id like lemon juice in it though.

    For a birthday party I am serving Chicken Salad on croissants, what should I serve with it instead of chips? I would like it to be more elegant than chips.
    The chicken salad is made with chicken, of course, herb cream cheese, mayo, dried cranberries, green onions, sliced water chestnuts, lemon pepper, hard boiled eggs. Think that is about it from my memory!

    My in-laws are coming for lunch on Saturday and I want to make chicken salad. I usually put grapes or cubed apples in it, but am wondering what else I can put in chicken salad. By the way, raw onions of any kind are out (Mother-in-law doesn’t like), green peppers are out (Father-in-law doesn’t like). They also don’t like any “wierd” flavors, so curried chicken salad is out. They also don’t like anything hot/spicy, including black pepper. HELP!!!

    Lowes food store has a chicken salad in there deli, it is soo good!! and i want to make it for the holidays. it looks like it has poppy seeds in it also, and celery, but i want the recipe so ill get it exact.

    I want to make chicken salad sandwiches for our potluck tomorrow at lunch. I have to take them with me to work. We have a refrigerator at work I can put them in. My plan is to make them tonight, cut the sandwiches into fourths, put them in large Tupperware container. Will they last through the night? Will they get soggy?

    I’m planning a dinner with just a basic light chicken salad (grilled chicken, romain lettuce, cucumber, grape tomatoes and maybe some cheese) as the main dish. what else should I serve with the salad?     The chicken salad mentioned has little strings of cheese.
    I don’t eat those cheese unless I accidentally pick them up with my salad.
    Everyday… for lunch.
    And I do eat some other food at home too, but I only eat a little.
    I’m 15.

    I am wanting to serve chicken salad croissants at a baby shower but I am needing ideas of what to serve with them. I like the idea of having a fruit tray and veggie tray but the chicken salad that I make has apples, grapes and celery in it. Would a fruit tray be too much fruit? Any ideas??

    Ok I’m trying to figure out what I should serve as a side with my curried chicken salad sandwich. The salad itself will have chopped mango, apple, red onion and celery and also raisins and possibly some sorta nut.

    But I was thinking maybe a cucumber salad(non mayo) or fresh fruit and maybe french fries as the sides. There are onion rings and seasoned potato wedges frozen at the restaurant that I work at too that I could possibly serve it with. ?

    What side can you think of that would be good with it?

    I had chicken salad for lunch today, and the sauce spilled all over my binder and backpack. It smells weird, and its very strong. What can I do (remember, Im still at school, so I dont have acsess to like bleach and stuff) to get the smell out? Thanks!
    p.s I think it might have peanut oil in it, if that helps at all.
