Eggless Mayonnaise

This a GREAT mayo, it will keep 4 to 5 days in the refrigerator and can be doubled or tripled or cut in half.
Ingredients:
  • 3 tablespoons lemon juice
  • 1/2 cup soymilk
  • 1/4 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon prepared mustard
  • 6 tablespoons vegetable oil
Method:

  1. Put all the ingredients except the oil in a blender.
  2. Blend on lowest speed.
  3. Add the oil slowly until the mixture starts to thicken.
  4. Continue blending until thickened and smooth.
  5. Transfer to a jar and store in the refrigerator.

    As the question says, I’d like to know if anyone here is from London (UK) and knows where you can buy eggless mayo, I’ve searched several big stores like Sainsburys, Tesco, etc but nobody seems to have it. If possible, the jar (avg weight – 300g) should be under £3.

    Please don’t tell me a website where you can buy it unless it has standard free delivery, since the postage cost itself is more than what the jar is worth!
