I’ve been battling with aubergines (eggplants) for some time, never liked them.
THEN last week, I was making curry and the recipes advised me to char the skin, like with peppers. Used the pulp to thicken the curry, it was lush.
So now, I want more dishes that use roasted aubergine without the skin.
Thank you!!
