French Onion Soup Sandwiches

Is it a soup? Or is it a sandwich? It’s both! These grilled panini sandwiches are full of caramelized onions and Gruyere cheese–it’s French onion soup in sandwich form.


  • 2 tbsp olive oil
  • 2 large onions, thinly sliced
  • salt & pepper to taste
  • 1/2 tsp dried thyme
  • 4 ciabatta rolls, halved
  • 1 c. shredded Gruyere cheese
  • 4 c. no-beef broth, heated


  1. Heat olive oil in a large skillet on low heat. Add sliced onions and cook until caramelized about an hour and fifteen minutes, stirring frequently.  Remove from heat and stir in salt and pepper to taste and thyme.
  2. Heat grill on high. Divide caramelized onions onto bottom of rolls and top each one with 1/4 cup of cheese and top half of roll. Grill for 10-15 minutes or until cheese is melted and bread is golden-brown. Serve each sandwich with 1 cup of broth.

    I really need a good recipe for french onion soup!!! My husband and I love the stuff, especially from panera, and I’d love to be able to make it at home!!!

    I want something really simple but tasty , to do with my onions.

    I just had a craving for caramelized onions , and its very impractical of me to simply sit and eat them :L

    Any ideas?

    I also have :
    stock cubes
    and most other things you would find in a Fridge or Cuboard.

    Croutons are the little chunks of friend bread you get in soup. But is there a certain size they have to be?

    I’m under pressure to create the ideal conoisseur’s sandwich as part of a sandwich competition ( not a joke, honestly) for a street party.
    So far i’ve thought of special ingredients like figs, cranberry sauce and pears but it doesn’t seem very imaginative?
    Please help: I really want to win!
