Fresh Broccoli Salad

Nuvita Biscuits

This salad gets extra crunch from toasted pecans or hazelnuts.

1 tablespoon white wine vinegar
1 lemon, zested
1 tablespoon freshly squeezed lemon juice
2 teaspoons Dijon mustard
1 teaspoon kosher salt
Pinch freshly ground black pepper
1/4 cup olive oil
1 pound broccoli, rinsed, trimmed and sliced thinly on a mandolin
6 ounces cherry or grape tomatoes, halved
3 ounces coarsely chopped, toasted pecans or hazelnuts
2 tablespoons fresh basil leaves

Whisk together the vinegar, zest, lemon juice, mustard, salt and pepper in a medium mixing bowl. While whisking constantly, gradually add the olive oil. Add the broccoli and toss to coat. Cover and place in the refrigerator for 1 hour.

Stir in the tomatoes, hazelnuts and basil. Cover and allow to sit, at room temperature or in the refrigerator, for another 15 minutes before serving.

I have been trying to eat healthier and I’m doing well. I’m just getting tired of plain veggies. Any tips on how to make Vegetables and salads taste a little better?

We are traveling and meeting family this weekend. I was just wondering if the salad will keep until Saturday’s potluck if I make it now (Wed or Thurs). I don’t really want to serve bad broccoli.

What are some ways to rid your body of toxins/bad things?

I want to completely start over and cleanse my body so it can have a fresh start. Besides drinking water, what are some ways to completely replenish/refresh/restart yourself (anything, really. Just no marketing scams. I don’t want to have to spend money on this or anything).

and once I do, what are things I should keep from consuming, etc?

I am going to visit family for Thanksgiving. To make things easier on the cook she asked us all to bring one side dish and she will cook the turkey. Pumpkin pie, bread rolls, cranberry salad and tossed lettuce salad are already being brought by other people. Please give me some good ideas of something easy to transport. It may take an hour on the highway to get where I am going.
