Garlicky Mushrooms Sautéed with Bacon and Wine

Mushrooms cooked in bacon and flavored in red wine

Serves 4

Recipes Ingredients:

  • 4 tablespoons olive oil
  • 6 rashers streaky bacon, chopped
  • 250g (8 oz) mushrooms, sliced
  • 2 cloves garlic, finely chopped
  • 250 ml or 1 cup red wine
  • 2 tablespoons chopped parsley
  • Salt and pepper
  • Lettuce

 Recipe Method:

  1. Heat olive oil in a large frying pan. Add bacon and fry until fat begins to run. Add mushrooms and garlic. Cook for another few minutes, shaking pan and stirring constantly. Pour in wine, turn heat up high and let it all bubble until sauce is reduced. Turn heat down and cook for another 5 minutes. Season to taste. Transfer to serving dish. Cool anti then refrigerate before serving on crisp lettuce, topped with fresh chopped parsley accompanied by bread sticks.

    Its in one of his books and some of the ingredients are chicken, bacon, banana, sweetcorn and cream. But I don’t know what it is!
