Gazpacho

Chopped vegetables blended with red wine vinegar, parsley, bread and tomato juice, served in glasses. Cheers!
Ingredients:
- 30 gms sugar
- 30 ml red wine vinegar,
- 1 celery stalk
- 1 tomato
- 1 red bell pepper
- 1 cucumber
- 1 medium onion
- A small bunch of parsley
- 10-12 cloves garlic
- 200-220 ml tomato juice
- 1-2 slices bread
- Salt & pepper to taste
- 2 Tbsp olive oil
- 5-6 ice cubes
Method:
- In a pan reduce the red wine vinegar with sugar. Chop the vegetables in random shapes and mix in a bowl.
- Add the parsley, bread and tomato juice. Olive oil, ice cubes, garlic, salt and pepper to the bowl.
- In a blender blend the mixture and serve in martini glasses.
- Garnish with lime wedges and a few finely diced cucumbers and bell peppers.

I suppose it is a mexican spice, I want to know what is it made of, the plant, or how it is made. In which dishes are used, the only one I know is “gazpacho”.
