- 4 rib-eye steaks, trimmed of excess fat
- zest and juice 1 lemon
- large handful parsley, leaves removed and roughly chopped
- lemon wedges, to serve
- Season and oil the steaks.
- Cook on the hottest part of the barbecue for 3 minutes on each side for medium-rare. Remove to a plate and allow to rest for a few minutes.
