Linguine with Easy Meat Sauce

2013-01-10

For picky eaters, try serving this easy meat sauce over whimsically shaped pasta, like bow ties, rotini, or wagon wheels.

Ingredients:

  • 1 (9-ounce) package fresh linguine
  • 1/2 pound extra-lean ground beef
  • 1/2 cup pre chopped onion
  • 1 tablespoon minced fresh garlic
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 3 tablespoons tomato paste
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1/4 cup (1 ounce) shaved Parmigiano-Reggiano cheese
  • 1 tablespoon fresh flat-leaf parsley leaves

Method:

  1. 1. Cook pasta according to package directions, omitting salt and fat. Drain.
  2. 2. While pasta cooks, heat a large skillet over medium-high heat. Add beef, onion, garlic, oregano, and salt; cook 5 minutes or until beef is browned, stirring to crumble. Stir in tomato paste; cook 1 minute, stirring frequently. Add tomatoes. Bring to a boil; cook 1 minute. Reduce heat to medium-low; cook 3 minutes or until thickened. Serve over pasta; top with cheese and parsley.

I have the flesh of the cod all de-skinned and ready to be cooked. Its not in fillets more just like chunks of meat. My only method of cooking is a frying pan, and I pretty much only have basic ingredients. (Onion, garlic, butter, salt, breadcrumbs, oil, vinegar, milk) I also have rice to cook it with, How would you go about preparing a meal out of this

I am about to start a nice little family of my own. I have a 3 year old daughter and are now pregnant with twin boys! I’ve never learned how to cook. I guess I’m a slow student. I microwave very well. I can’t even make bacon and eggs! I’m pathetic, I know. The only time my daughter gets a home cooked meal is when we go over to Grandma’s. I’m going to be a mother of 3, and I don’t want to give McDonald’s all my money forever.(Eventhough I love the dollar menu!) Please help!!! I can’t be that much of a hopeless case. RIght???!!!
