Mexican Salad
2013-03-02Ingredients:
- 4 light flour tortillas
- Olive oil cooking spray
- 1 corn cob, husk and silk removed
- 420g can red kidney beans, drained, rinsed
- 1 medium avocado, roughly chopped
- 1 tablespoon sweet chilli sauce
- 2 tablespoons lemon juice
- 2 teaspoons olive oil
- 1 medium tomato, chopped
- 1/2 small white onion, finely chopped
- 1 tablespoon chopped fresh coriander leaves
Method:
Preheat oven to 180°C/160°C fan-forced. Lightly spray 4 holes of a 3/4 cup-capacity texas muffin pan. Gently push 1 tortilla into each prepared muffin hole. Lightly spray with oil. Bake for 8 minutes or until golden. Remove from oven. Cool in pan.
Heat a chargrill pan over high heat. Cook corn, turning, for 10 minutes or until cooked through. Cut kernels from cob.
Place corn kernels, beans and avocado in a bowl. Combine sweet chilli sauce, lemon juice and oil in a jug. Add to corn mixture. Toss to combine.
Combine tomato, onion and coriander in a bowl. Transfer tortilla cups to plates. Divide corn mixture between cups. Serve with tomato mixture.

I am going to a a friends BBQ and want to bring some kind of snack. It will have to be something I can prepare the night before as it is a Friday and I will be going straight from work. They have te salads covered. I know I could make a dip but I was wondering if there is anything else?

Myself and two friends are entered in an “Iron Chef” competition at our school, and our theme is “Mexico”. We have to use 200grams of chicken, 2 vegetables, 1 fruit, and a native starch to Mexico. Not being Mexican myself, i was wondering what type of dishes that are unique, and that can WOW the judges.
Any suggestion? Nothing overly hard, there are only 3, and we only have an hour, and we’re going to practice, but likely only once due to time constraints. Please and Thanks!

chicken breasts
canned tomatillos
basic Mexican spices
fresh hot peppers
shredded cheddar/mozza cheese
achiote seasoning
I’m looking for something very yummy for dinner. I’ve never made anything with tomatillos before. What do you suggest?

I’ve been craving a good Mexican salad with pork barbecoa, rice, beans (not refried), a homemade soft tortilla, and that yummy creamy tomatilla dressing. Yummm!

Does any one have a recipe for a mexican/taco salad that uses kidney beans, western dressing and doritos? I know this sounds pretty simple, but I’m the type of person who prefers something to go on. : )
Also, do you have to cook canned kidney beans before serving them? This is for a cold salad to bring to a pot luck type of event.

I’m going to a dinner tonight, and am bringing a salad at the request of the hostess who is providing the main course and 1 hot side dish, another guest is bringing desert.

ok here is the deal- im white and my husband is mexican we always play fight about the way whites cook and mexicans cook- He wants a mexican chicken salad not a white persons all we put is mayo celery and chicken i never ate it growing up so i don’t now how to make it some one please help me! something about peas carrots and something else!

I am going in a couple minutes and I just don’t know what to get, I don’t want to get something that is full of calories and fat. I can get a salad with cilantro dressing but I always get that when I go there, I would like to try something different.

I’ve searched for the nutrional facts of “Acapulco’s mexican restaurant and cantina”, but I just can’t find it; does anybody know approximately how many calories are in the Mexican chicken caesar salad? the dressing is so creamy I’m thinking it’s high on calories.

Delicious! Went down really well. 5 out 5. Didn’t use the tortillas and served all together in a big dish instead of dividing.
