Mutton Kadai

Ingredients:
500 gm mutton pieces-washed and wiped
1 tsp ginger paste
1 tsp garlic paste
1cup onion paste
1/2 cup oil
1 tbsp cumin seeds
2-3 bay leaves
2 tsp garam masala
1 tbsp salt
1/2 tsp powdered turmeric
2 tbsp powdered coriander seeds
1/2 tsp powdered red pepper
3 cups (500 gm) finely chopped tomatoes
Method:
Heat oil and add the cumin and bay leaf. When seeds splutter, add the ginger, garlic and onion and saute over high heat till light brown.
Add garam masala, salt, turmeric, coriander powder and red pepper.
Keeping heat high, add meat and turn around till slightly opaque.
Lower heat and let the meat cook, covered, stirring occasionally, till the water dries up and fat separates.
Add tomatoes and let it simmer, till fat separates. Serve hot garnished with coriander leaves.

i soak the chickpeas all day then cook in pressure cooker then fry garlic,onions,tomatoes,jeera,salt,turmeric,garam masala,chilli. then add it together then put it in the pressure cooker for one more whistle is there an alternative/better/yummier way to cook it?
btw i learnt this recipe from my mother-in-law. in india.

Myself is very fond of fastfood.He like to have panipuri,masala puri and kalan from roadside panipuri shop.we r frm coimbatore ->tamilnadu->india…..this is not available in any part of southindia.it s spl fastfood in n around coimbatore.now we r in america.He miss these food a lot.i found recipe to make masala puri->masal.but couldnt find recipe for ‘kalan’.it s made of mushromm,some masala n masala puri masal.it will b so yummy(i havent tasted,bcoz i dnt like mushroom..but can say it s yummy seeing my husband reaction hvng it)….Nowadays he s keep on saying he miss it…so i like to prepare it myself n satisfy him…plz plz help me

specifically, i am looking for vegetarian recipes that use garam masala. i fell in love with Indian food again and i’ve got spices coming out of my ears! thing is, i have no clue what to do with them. please try not to flood me with tofu recipes as i’m probably the only vegetarian i know who can’t be bothered with the stuff (it reminds me too much of half-dried school glue or paste).
