Muufo/Mkate wa Mofa

This delicious bread is of Somali origins. It’s known as Muufo in Somali, but in E/Africa it is more commonly known as Mkate wa Mofa (which means Mofa Bread).

Ingredients:

1 ½  cups self-rising flour
¾  cup all-purpose/plain flour
¼ cup maize flour (unga wa sima)
2 tsp. salt
¼ cup sugar
2 tsp. yeast
¼ tsp. garlic paste
1 – 1 ½ cups of WARM water

Method:

Put all the dry ingredients into a big bowl. Stir together so that everything is well-combined. Then gradually add the warm water whilst stirring. Once it is of a slightly loose-batter consistency, stop adding water and mix the batter very very well using either your hand or a whisk. Cover the bowl with cling wrap and store in a warm area for about 2 hours. The batter will double in size and be filled with bubbles.

Heat a tava or small frying pan. Dab a tissue in some oil and give the surface of the tava/pan a light wipe. Using a serving spoon, scoop up about half a cup of batter and pour it on the pan, trying to shape it so that it is round. Cover the tava/pan using a saucepan lid. Keep the heat on low and let it cook for about 2 minutes. Remove the cover and check the surface of the bread, it should have small bubbles all over. Gently lift and have a peep to check the under-side, if it is nice and brown, flip the mofa over and dab it with about half a tsp. of oil. Cover again and let it cook for another 2-3 minutes or until it looks done. Remove and store in a clean kitchen towel until ready to serve. Continue with the rest of the batter, remembering to give the tava/pan a quick wipe in between mofas!! Enjoy! :)

    I mean for people from nations without a visa-wavier agreement with Japan who have been issued a 90 day visitor visa, how long do they have from date of issue to date of entry to use it? If I could get a cite of the exact regulation that would be useful. I am guessing it is one year, but I am not sure in the case of a 90 day visa.

    My friends and I are planning to move to Japan as soon as we graduate. But I need to know somethings about Japan before I even start packing. Is it possible to “immigrate” and live there forever or do you only get a travlers visa or student card? Where do you go to register? What do you do to get an apartment? Can you list a few websites that have Japanese translations or a website that can teach you how to speak the language? And a website that can tell me about traditions and customs in Japan. Any and all information will be helpful! Thanks!

    I am 20 years old and i have nothing to do for year until i go to college next year. so instead of waiting around in a boring old town i want to go work abroad. I really have no skills besides being able to cook and play a mean bass. I also only speak English. so basically i have no skills. how can i still travel to somewhere like japan and work for a year?

    My employment visa is from ABU DHABI . Can I do attestation of my employment contract from Ministry of foreign affairs ( SHARJAH ) instead of ABUDHABI , before attesting it in Indian consulate ?     I am a Permanent resident of the USA and I am planning to go to Japan for 9 days… One of the requirements for a Visa is a bank statement… how much does my bank account need to have so I will get approved for a visa? I only have a checking account because I am a full time college student (read: unemployed) and my parents give me money… Actually they will be paying for my trip to Japan… Do I even need a savings account? So how much do you think I should have in my account? Thanks!

    **Alot of people are confused about the ‘Bank Statement’ so here is a link that I found: http://www.la.us.emb-japan.go.jp/e_web/e_m02_06_04.htm It said there, at the bottom part about “Tours/Sightseeing” and mentioned US Bank Statements. Thanks again.

    ********UPDATE: Just to make it clear, I am a permanent resident (Green Card) who has been in America for only 4 and a half years (meaning, I am not yet eligible to apply for American Citizenship) and I hold a Philippine Passport.

    I want to make a simply chicken biryani. Note that I’m a 24 year old student, and I have very little experience in cooking.

    I have the following ingredients with me.
    -Chicken
    -Rice
    -Ginger Garlic paste
    -Cumin
    -Onions
    -Tomatoes
    -Assortment of masalas
    -Mixed vegetables (frozen)

    I already applied for MOFA # on 6.6.2011 , So , I’m still without that number. Next month is August and i know is Muslim month and time is for Ramadan . If somebody knows please let me know what is that why we have to wait so much … and it is more difficult for get the Mofa # in Ramadan time ?
