Peppered Steak with Creamy Mushroom Sauce

2013-02-24

Ingredients:

  • 1 tablespoon cracked black pepper
  • 4 scotch fillet steaks, trimmed
  • 50g butter, chopped
  • 3 garlic cloves, crushed
  • 200g button mushrooms, thinly sliced
  • 150g shiitake mushrooms, stalks removed, thinly sliced
  • 4 sprigs thyme
  • 2 tablespoons red wine or beef stock
  • 1/3 cup thickened cream
  • mashed potato and baby spinach, to serve

Method:

  1. Rub both sides of the steaks with cracked black pepper and season with salt. Heat 30g butter in a heavy-based frying pan over medium-high heat. Cook steaks for 2 to 3 minutes each side for medium or until cooked to your liking. Transfer to a plate. Cover with foil.
  2. Add remaining 20g butter, garlic, mushrooms and thyme to pan. Cook, stirring often, for 4 minutes or until mushrooms are tender. Add wine. Cook until wine is almost evaporated. Add cream. Reduce heat to medium-low. Simmer for 1 minute or until sauce begins to thicken.
  3. Spoon mashed potato onto plates. Top with steak and spoon over mushroom sauce. Serve with spinach.

I have a shiitake mushroom log that produced one mushroom a few weeks ago. I shocked it again last week and it froze (I live in Milwaukee, WI) outside. It’s now thawed, but there is white mold on the both ends of the log, but no signs of mushroom growth…is this normal? Also, right after the shock, I saw some green mold, but cut that off. What do I do now?

I’m making a mushroom(shiitake) soup(not creamy) tonight with vegetables and I’m wondering, what herbs or spices would be good for it?

I know this is a local question, but I LOVE the panang beef curry from the Thai Cafe restaurant in Tracy, CA and would love to make it at home. It is #18 or 19 I think, has a creamy peanut buttery/red curry sauce with bell peppers, thai basil and onions – so yummy. I’d appreciate any help, thanks everyone!

I have 2 halves of bone in hams, 1 New York strip (sliced), 1 T-Bone steak (sliced), and about 2 or 2 1/2 cups of cut up turkey meat. Looking for ideas for dishes to make with all this leftover meat from the holiday dinners that I have frozen.

I’m a mom looking for a few good recipes…..I’ve tried most, but it seems that the best recipes I’ve tried have been family hand me down recipes. So got any good food recipes to share? I’m able and willing to try easy to hard recipes. I would perfer easy recipes, but at this point my family needs to eat something new besides hotdogs and chicken.

I was thinking about making a big delicious steak or a turkey with a creamy sauce. And for desert maybe a large cream and chocolate cake, help me decide what to make and what ingredients and tools I need.

Some, for example the Pandaroo brand taste smokey. Does everyone get that taste with the reconstituted shiitake mushrooms?

I am thinking of making steak for tomorrow night’s dinner but I would really like to know of a delicious sauce or side dish that would go perfectly with steak. I’ll probably make some kind of potatoes (baked, mashed, etc.), and I’m thinking of maybe a mushroom or cheese sauce. I have the image in my mind (potatoes on the side, steak on the other side, with sauce poured over the top) … so I just want to actually create it!
    Thanks for your help :)

I mean like super simple. I have a newborn and cooking for my veg husband is usually pasta and some sort of sauce. I’m sure he is growing tired of it.
actually a salad sounds like a good idea. any fresh ideas on one instead of just lettuce, tomato, etc. ?

I cook herbs, sprouted quinoa, sprouted rice, shiitake mushrooms, diced onion, in a thin uncovered stainless steel bowl over a candle for about 4 hours. The candle is there to avoid cooking at a high temperature and thus going over the foods’ labile points, and to gently cook the food. Is this method as healthy as or even better than steaming?

Whats your favorite homemade breakfast? I have a friend visiting from out of town, and was thinking of making a rather lavish breakfast for her from scratch. Bonus points if you provide the recipe for the idea!

My husband bought a pork loin, and I have no idea what to do with it!! I don’t enjoy cooking, so I don’t want something too painstaking. Do I roast it? Do I need to marinate it? Sauce?
