Piña Colada Cheesecake

The Piña Colada cocktail is a popular drink that features the flavors found in this cheesecake. The combination of orange, pineapple, coconut and rum combine for a marvelous, tropical-inspired cheesecake.

Ingredients:

Crust

1 3/4 cups graham cracker crumbs
6 tablespoons butter or margarine, melted

Filling
3 packages (8 oz each) cream cheese, softened
1/4 cup sugar
3 eggs
3/4 cup cream of coconut
1/4 cup light rum
2 teaspoons grated orange peel
1 can (8 oz) crushed pineapple in juice, drained, juice reserved
Glaze
Reserved 1/2 cup pineapple juice
2 teaspoons cornstarch
1/4 cup sugar
Garnish
1  can (8 oz) crushed pineapple in juice, drained
1 jar (24 oz) refrigerated sliced mango, drained, chopped
Fresh mint leaves, if desired
Method:
Heat oven to 325°F. Wrap outside bottom and side of 10-inch springform pan with foil to prevent leaking. Spray inside bottom and side of pan with cooking spray. In small bowl, mix crust ingredients. Press crust mixture on bottom of pan. Bake 8 to 10 minutes or until set.
In large bowl, beat cream cheese and 1/4 cup sugar with electric mixer on medium speed until light and fluffy. Beat in eggs; one at a time; just until blended. On low speed, beat in remaining filling ingredients except pineapple. Gently fold in pineapple. Pour over crust.
Bake 1 hour 10 minutes to 1 hour 15 minutes or until edge of cheesecake is set at least 2 inches from edge of pan but center of cheesecake still jiggles slightly when moved. Run small metal spatula around edge of pan to loosen cheesecake. Turn oven off; open oven door at least 4 inches. Let cheesecake remain in oven 30 minutes. Cool in pan on cooling rack 30 minutes. Refrigerate at least 6 hours or overnight before serving.
In 1-quart saucepan, mix reserved pineapple juice plus enough water to equal 2/3 cup, cornstarch, and sugar. Heat to boiling over medium heat, stirring constantly. Boil 1 minute, stirring constantly, until slightly thickened. Cool 20 minutes at room temperature.
In large bowl, toss glaze with pineapple and mango. Spoon onto top of cheesecake. Garnish with mint leaves.
Tips:

Use a food processor to quickly and easily make the graham cracker crumbs.

When making any cheesecake, be sure to have the cream cheese, eggs and other ingredients at room temperature. Also, this is not the time to select low-fat or fat-free cream cheese or sour cream, as these will not work as well nor will the low fat varieties create the best flavor and texture for the finished cake.

    I love Milkshakes, and cheesecake. Not to mention Cherry Pudding. :)

    I would start with stuffed french toast and orange juice at IHOP for breakfast. For a morning snack I would have an Icee and nachos from seven-eleven. For lunch I would go to Red Lobster and eat a double portion of the coconut shrimp with pina colada sauce followed by their vanilla bean cheesecake. For dinner on to a great Chinese restaurant and eat sweet and sour chicken and pork and noodles and lots of fried rice. Finally I would top the day off with a piece of my brothers homemade chocolate silk pie. All of these are foods I haven’t touched since I was diagnosed five years ago. How about you?
    I don’t touch those foods anymore because I used to eat them all the time and I also weighed 70 lbs more than I do now. Also, I can never handle rice especially fried, it just makes my blood sugar climb way too much.

    I have the below recipe and would like to know how I can easily scale this down to a more manageable serving.

    1-gal of any clear rum
    1-gal of coconut rum
    1-5th of Campari
    1-gal orange juice
    1-gal pineapple juice
    Mix together and add a bag of ice.

    Any help would be appreciated, thanks.

    okay so my cousin runs track and her butt is HUGE. its all muscle and it is sooo big. now how since ive been running on the treadmill, its only making my butt smaller? i have it on the highest incline..also people say squats but it seems like since i been doing squats it doesnt make my butt any bigger. what can i do!? please help i am sooo self concience about my flatt butt. thanks !

    I am 15 yrs old. i am 5’5 play alot of soccer and always active. also i workout a lot for example a lot of CROUNCHES.sit ups,and PUSH UPS.Lastly small amount of weight lifting.
    i want to have abs and arm muscle. Protein shakes will help so should i buy one or make one bc i am a teen.
    plz dont give me anything to diffulcult to make i have 2% milk to work with so no fancy milk.

    im having a couple girlfriends over this sunday. the past few sundays we have all hung out and cooked for eachother. just trying to come up with something to make them. i did the lasagna thing. another weekend i went all out and made a ham and mash potatoes and such. but even then i cut up a bunch of veggies and they seemed to enjoy that more then the ham i spend a load of money on. any ideas would help. any clever dessert ideas? non alcoholic drink ideas? its for about 8 people.

    I am 5’6 and 110 pounds. And I am a guy. No matter how much I eat I don’t gain weight. I worked out in a gym for half a year and I didn’t gain that much weight. But at September of last year I was like 89 pounds and 5’1. I would like to wrestle in high 119 weight class by November. How could I gain some more weight?

    I’ve heard that you should take out three times the amount of the liquid to the amount of cornstarch you are using and mix the two together in a small bowl when the liquid is cool. Then add back into the simmering sauce or marinade. Is this a good method? Anyone have some better suggestions, ideas, or insights?

    I was at Sam’s club and I tried a delicious, premade Cheese Cake called Paradise Cheese cake, it had Coconut and Pinapple in it, I would love the recipe if anyone has any ideas, I want to learn to make it myself. The name of the Company it was made by was Atlanta Cheese Cakes, it was a very good cake and I would love to learn to make it.

    LMAO to the people who are bitter because he lives in a council house. You remind me of my ex girlfriend who would rant and rave and throw her arms (and legs) in the air complaining that her friend has bought and sold her council house and re bought something bigger and better than what she had. And most of you if not all of you have cheated with your child tax credits or working tax credits. That is a fact.
