Roasted Pork and Potatoes With Creamy Applesauce

Pork tenderloin is a lean cut of meat and a perfectly elegant choice for a holiday meal.

Ingredients:

  • 1 1/2 pounds small red-skinned potatoes, halved
  • 1 red bell pepper, cut into 1-inch pieces
  • 2 teaspoons fresh thyme
  • 1 1/2 tablespoons extra-virgin olive oil
  • Kosher salt and freshly ground pepper
  • 1 cup applesauce
  • 1/4 cup light sour cream
  • Dash of freshly grated nutmeg
  • 1 1/4 to 1 1/2 pounds pork tenderloin, cut into 4 pieces

Method:

Preheat the oven to 375 degrees F. Toss the potatoes and bell pepper with the thyme, 1 tablespoon olive oil, 1/2 teaspoon salt, and pepper to taste in a shallow baking dish. Transfer to the oven and roast until the potatoes are slightly tender, about 20 minutes.

Meanwhile, mix the applesauce, sour cream and nutmeg in a small bowl and set aside.

Pat the pork dry and season with salt and pepper. Heat the remaining 1/2 tablespoon olive oil in a large skillet over medium-high heat. Add the pork and sear until browned on all sides, about 6 minutes. Transfer the pork to the baking dish with the vegetables and continue to roast until a thermometer inserted into the center of the pork registers 145 degrees F, 15 to 20 more minutes. Transfer the pork to a cutting board and let stand 5 minutes before slicing. Serve with the roasted vegetables and creamy applesauce.

    Breakfast: yogurt, cereal, fruit and orange juice

    Lunch: romaine lettuce with grilled chicken, olives and peppers and with this tea that’s 32 calories 

    Dinner: romaine lettuce with grilled chicken, olives and peppers and fruit and a glass of milk. 

    Excericse: I got this pilates video, run 30 minutes, and do 600 sit-ups throughout the course of the day along with lifting some weight(5/15lbs) and do all this in a day for 6 days a week

    Drink as much water as possible(6-8 glasses a day) 

    I also take a 1 hour hip hop class on Tuesdays and 1&1/2 hour ballet and tap class on Wednesdays. I would still do my normal exercising on my dance days. 

    Is this a good diet to loose weight? 

    I’m 13 years old, am 5’7 and weigh 182lbs and I want to loose 50 pounds, will this diet do it? I would like to at least look decent by summer to wear a bikini, is this possible? I’m motivating myself when I loose weight on going to get a belly button piercing! 

    My goal weight is 136lbs:)

    5. Hot roast pork, sage and onion stuffing applesauce and crispy crackling in a soft bread roll
    6. Rich thick homemade vegetable soup with crusty cheese and onion bread
    7. a succulent pork and bacon meat loaf with onion gravy, greens and creamy mashed potatoes
    8. mom’s own fried chicken, juicy, crispy and finger lickin’ good!
    9. Deep dish meat (best beef) lasagne, baked until bubbling and golden smothered in cheese
    10. Chicken fillet in a bun, with garlic mayo, lettuce and tomato, crispy smoked bacon in a ciabatta roll
    forgot to say, EVERYTHING is homemade right down to the pasta and bread, there are fresh fruit smoothies and freshly squeezed juices to drink, and today’s thre puds are apple pie, chocolate fudge cake or fresh strawberry cheesecake

    Breakfast: Cornflakes cereal with skim milk
    Lunch: Whole wheat sandwich with chicken breast
    1 hour workout
    Dinner: Glass of skim milk, 2 oranges, and an apple

    I weigh 126 lbs at 5’4
    Am I over eating?

    im starting tommorow here is what ill be having.

    Breakfast: 2 Weetabix with a banana

    Lunch: Ham & tomateo sandwhich with an apple

    Dinner: Weight watchers frozen meal which is about 330 calories. with some veg

    And ill do a 1hr and a half stricly come dancing workout dvd
    throught out the day if i get hungary ill eat fruit and drink water!
