Seafood Coconut Crepes (Vietnamese)

Dill flavoured creamy prawns—n—fish encased in delectable pancakes in about 40 minutes!


For the pancake batter:

  • ¼ cup whole wheat flour
  • ¼ cup refined flour
  • ¼ cup rice flour
  • 1 egg
  • ¼ tsp baking powder
  • Salt to taste
  • ¼th cup coconut milk
  • Water as required
  • 1 tbsp oil

For the seafood mixture:

  • 10—12 large prawns, sliced
  • 250 g boneless fish, flaked
  • 1 tbsp oil
  • 1 tbsp butter
  • 1 tsp chopped garlic
  • ¼ cup fresh cream
  • Salt and pepper to taste
  • 1 tbsp lime juice


To prepare the pancakes:

  1. Combine the flours, egg, baking powder, salt, coconut milk and water to make a nice thin batter. Set aside for 10 minutes. Grease a non-stick pan with a little oil, pour in a ladleful of batter and swirl around the pan to form a thin pancake. Cook on both sides for a minute and remove. Set aside.
  2. To prepare the seafood mixture, heat the oil and butter in a pan. Sauté the garlic, add the fish and prawns, cream, salt, pepper, and lime juice. Add a little flour to sop up any excess moisture. Cook for five to seven minutes. Remove from heat and allow to cool.

To assemble the pancakes:

  1. Take each one, spread a spoonful of the seafood mixture and roll up, sealing the ends. Slice at an angle and serve with tomato sauce.

    What is this food? It looks slimy maybe made with gelatin and has fish or crab in it? It is wrapped in some type of leaf and is small. You eat more than one for a snack or maybe a small meal. Thank you in advance and I hope that was enough description.
