Sweet Potato Curry With Spinach and Chickpeas

This a wonderfully full flavored, vegetarian curry.


  • 1/2 large sweet onions, chopped or 2 scallions, thinly sliced
  • 1 -2 teaspoon canola oil
  • 2 tablespoons curry powder
  • 1 tablespoon cumin
  • 1 teaspoon cinnamon
  • 10 ounces fresh spinach, washed, stemmed and coarsely chopped
  • 2 large sweet potatoes, peeled and diced (about 2 lbs)
  • 1 (14 1/2 ounce) can chickpeas, rinsed and drained
  • 1/2 cup water
  • 1 (14 1/2 ounce) can diced tomatoes, can substitute fresh if available
  • 1/4 cup chopped fresh cilantro, for garnish
  • basmati rice or brown rice, for serving


  1. You may choose to cook the sweet potatoes however you prefer.
  2. I like to peel, chop and steam mine in a veggie steamer for about 15 minutes.
  3. Baking or boiling work well too.
  4. While sweet potatoes cook, heat 1-2 tsp of canola or vegetable oil over medium heat.
  5. Add onions and sauté 2-3 minutes, or until they begin to soften.
  6. Next, add the curry powder, cumin, and cinnamon, and stir to coat the onions evenly with spices.
  7. Add tomatoes with their juices, and the chickpeas, stir to combine.
  8. Add ½ cup water and raise heat up to a strong simmer for about a minute or two.
  9. Next, add the fresh spinach, a couple handfuls at a time, stirring to coat with cooking liquid.
  10. When all the spinach is added to the pan, cover and simmer until just wilted, about 3 minutes.
  11. Add the cooked sweet potatoes to the liquid, and stir to coat.
  12. Simmer for another 3-5 minutes, or until flavors are well combined.
  13. Transfer to serving dish, toss with fresh cilantro, and serve hot.
  14. This dish is nice served over basmati or brown rice.

    well i guess it is possible, you would just have to cut out even more foods, so my question is more , is it doable on long term basis?
    I feel better when i dont eat as many carbs, but after a while i get tired of eating the same things and when i try search for low-carb recipies, they always contain meat

    I want to start doing BIG breakfasts, Medium lunches, and light dinners. What are some light dinner ideas BESIDES grilled chicken and salad? (Also I try NOT to eat meat EVERY night so some yummy meat free-but protein still included dinner ideas are welcome as well!)
    k I will reiterate….. I DO NOT want carb loaded meals, nothing with over processed crap…….HEALTHY

    I saw a recipe in my local newspaper for twice baked sweet potatoes.It looked really good but it didn’t say the exact ingredients.I am looking for one where you mix in maple syrup,and or cinnamon.

    I’ve noticed that being a vegetarian is good if your dieting; so I’m thinking why not, you lose a couple of pounds, your not eating animal flesh and i think it’s cool to say that I’m a vegetarian:)
    But the problem is that I’m a meat lover and i know its going to be hard so can you tell me what i can do step by step to become a devoted vegetarian. THANKS!

    im a vegitarian i have been for about 11 years and im aso a picky eater and i need help thinking of things to eat i want something a little bit diffrent. please give me like as many breakfast ideas snack ideas and dinner ideas and lunch ideas the person with the most ideas and what sounds most apealling to me will get that glorious 10 pts so please help me out

    I am a stay at home mom of a 7 month old. I LOVE COOKING! I plan to go through a culinary school soon because i love it so much. Well, i have been watching the Food Network a lot lately and see that alot of oils and basic items are used in ALOT of dishes. So im wanting to stock my kitchen with cooking necessities. What do I always need to have?
    Also I am wanting to cook more elaborate foods and not just one country but a wide range. So any helpful recipes are greatly appreciated as well… And as i said I am a stay at home mom so I DO have ALOT of time to cook. i really dont need 30 minute meals that taste like the box they come out of… I’m tired of boxed meals.. but at the same time I dont want to spend a fortune shopping at the grocery store! Any help is greatly appreciated!

    I would like to move from vegetarian to vegan, but what do you guys eat on a daily basis? I notice there is a lot of breads, pastas, and sugars, that i personally am not too fond of eating that often……..

    which are the basic vegetables need? (if dont want to spend a lot or hardly much at all really)

    have already indian rice and curry powder..and other spices..so dont need them.
