Ingredients:
- 2 cups couscous
- 3 cups hot water
- 1 teaspoon salt
- 2 cups shredded carrots
- 1 cup fresh, frozen or canned corn
- 1 cup chopped macadamia nuts
- 1 cup chopped fresh cilantro
- 2 teaspoons fresh crushed garlic
- 2 teaspoon fresh grated ginger
- 1/2 cup chopped pitted dates
- Place the couscous in a bowl, pour over the boiling water.
- Then let stand until cooled to room temperature.
- Stir in the remaining ingredients and chill.

Ok so i’m making stuffed peppers as part of this meal tomorrow, and I’m making the stuffing from couscous with chillies, mushrooms, cumin, coriander, couple raisins etc.
Should I cook the filling now and keep in the fridge overnight?
Will this enhance the flavour or do nothing?
Please help!

Trying to think of more things to add to salads.
I usually use chicken, lettuce, tomatoes, carrots, cheese, black olives, green olives, crountons, bacon pieces, sunflower seeds.
Something that kids would like eating.

So I am throwing a dinner party and not sure what to make…I want it to be healthy since some of us are watching our weight…I want it to be quick since its right after work and dont have much time to prepare…I did go to culinary school so I am a good cook, but everything i make has a million calories…It needs to be very tasty as my guests are expecting something amazing….
my ideas were along the lines of a moroccan or spanish style theme…i wanted to make a fillet and mushroom kabob with a couscous salad….any other ideas???
i was looking for recipes…and other suggestions on main dishes and sides.
