Vegetarian Chickpea Sandwich Filler

Serve on crusty wholemeal rolls or pitta bread with lettuce and tomato. Other raw veg can be used instead of celery.
Ingredients
- 1 1/2 (400g) tins chickpeas, drained and rinsed
- 1 stalk celery, chopped
- 1/2 onion, chopped
- 1 tablespoon mayonnaise
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh dill
- salt and freshly ground black pepper to taste
Method
- Pour chickpeas into a medium size mixing bowl and mash with a fork.
- Mix in celery, onion, mayonnaise, lemon juice, dill, salt and pepper.

I have been a vegetarian for nearly a year now and I have put on weight – which is really annoying me as I thought that if anything I would lose weight! Has this happened to anyone else?
Also, I still find that I need to eat fish every so often, which I know does not make me a vegetarian, but I am trying- can anyone help with an easy vegetarian sandwich filler (to get me away from tuna etc).

I’m a vegetarian and I’m looking for yummy sandwich fillers for my upcoming birthday party. My friends are coming over and plain old cheese isn’t going to impress anyone!! Can you think of something interesting I could use (instead of cheese) as a sandwich filler? thanks
