Yummy Pesto Mashed Potato

There are so many types of pesto available now; choose basil, sundried tomato, coriander or porcini pesto – depending on the main dish. By simply adding one tablespoon of pesto to boiled potatoes then mashing, it adds a delicious alternative with a hint of colour to the usual mash….and guess what…..the kids just love it too! You could also add some sundried tomatoes and top with a little grated Cheddar and black pepper.

 

 

Ingredients

  • 4 potatoes (or enough for a side dish for 2 adults and 2 small children)
  • a knob of butter
  • a dash of milk
  • 1 tablespoon of pesto

 

Method

 

  • Place the potatoes into a saucepan with enough water to cover.
  • Bring to a boil, and cook until tender; about 10 minutes.
  • Drain, and mash with butter and milk to your desired consistency.
  • Mix in pesto, and serve.

    I need some ideas because I’m not hungry yet, but need to come up with something sooner rather than later. It’s 85 degrees here, so no soup kind of meals. We grill a lot. Sorry, I’m just not able to think whether chicken or salmon or tuna or tacos or what. Any creative ideas would be great.

    I take vitamins. I have never really known if they are really neccessary or not but I don’t consume a fruit and vegetable every single day. My little brother rarely eats fruits and vegetables and he over eats on a daily basis. I am concerned about him getting proper nutrition and want to know what kind of vitamins he should take. At the grocery store I only see child specific vitamins for 2 and 3 year olds. Help please
