Bacon & Avocado Pasta Salad
A simple pasta salad loaded with bacon and avocado mixed with an easy and light salad dressing. A sprinkling of thyme on the salad brings out the freshness in the bacon & avocado pasta salad. This salad is all you need after a week of heavy eating junk. It is to die for!
Ingredients
1/2 cup mayonnaise
1/4 cup lemon juice
1 tbsp sugar
1 tsp dried thyme
Salt to taste
Freshly ground black pepper
1/3 cup olive oil
5-6 rashers of bacon
2 1/2 cups Daawat Elbow Pasta, cooked
1 ripe avocado, sliced and chopped into 1 inch pieces

In a blender, blend mayonnaise, lemon juice, sugar, thyme, salt and pepper for 1-2 minutes.

While the blender is on, pour the olive oil in a steady stream and blend for another 1-2 minutes or until the dressing is thick and creamy.

Cook the bacon on a dry pan for 2-3 minutes or until crispy and give it a rough chop.

In a bowl, mix together pasta, the dressing, avocado and bacon and serve.
