Crispy Garlic & Avocado Fried Rice
We Kenyan’s love Avocado. I mean, if we had our way, we would put avocado in every single dish. This recipe is a simple fried rice served with creamy avocado and topped with crispy fried garlic. Trust me, the crispy garlic makes all the difference.
Ingredients
2-3 tsp oil
3-4 cloves of garlic, roughly chopped
2 eggs, beaten
1 cup green beans, chopped
1 cup Daawat Parboiled Rice, left over/ cooked
Salt & Pepper to taste
1/2 avocado, sliced
Instructions

In a pan saute the garlic with 1 tsp oil for 1-2 minutes over a low flame until crispy. Take it out onto a paper towel and let absorb excess oil.

In a wok, add 1 tsp oil and beaten eggs. Scramble making sure not to cook all the way through as they will cook a little further when heating with the rice. Take out onto a plate.

In the same wok, add 1/2 tsp oil and cook the green beans for 1-2 minutes and take out onto a plate.

Finally, add 1/2 tsp oil into the wok again, toss the rice with the scrambled eggs and green beans, season with salt and pepper and let heat through.

Serve in a bowl with sliced avocado and a sprinkle of crispy garlic.
