Kidney Bean Rice
Simple, perfectly spiced and absolutely delicious! This Kidney Bean Rice will make your day that much tastier.
Ingredients
2 tbsp oil
1 onion, chopped
1 tbsp garlic, minced
1 tbsp ginger, minced
1 can crushed tomatoes
1 tsp chili powder
1/2 tsp turmeric powder
1 1/2 tbsp coriander-cumin powder
Salt to taste
2 cans kidney beans, drained and washed
2 cups Daawat Basmati Rice, soaked
4 cups water
Coriander leaves, chopped
Instructions

Heat oil in a heavy based pot. Add onions and cook for 2 minutes or until they turn translucent. Add ginger and garlic and cook for 30 seconds.

Add crushed tomatoes, chili powder, turmeric powder, coriander-cumin powder and salt. Cover with a lid and let simmer for 5 minutes.

Add kidney beans and rice and stir. Pour water and stir. Let come to a boil and then lower the temperature and simmer for 12-15 minutes.

Stir in coriander leaves, fluff with a fork and serve.
Do you need to pre boil the kidney beans?
Hi Linda, I used canned Kidney beans. If you are using raw kidney beans, boil them before using them.
