Minestrone Soup
Minestrone soup is a hearty Italian comfort food that is often made with fresh vegetables that are in season with the addition of pasta or rice. It is flavourful and wholesome and also perfect for the cold nights.
Ingredients
2 tbsp oil
1 large onion, chopped
1/2 cup celery, chopped
1 tsp garlic, chopped
1-2 red chillies, chopped
1 1/2 tsp mixed herbs
4 1/2 cups vegetable stock
1 can tomatoes, crushed
1 cup cabbage, roughly chopped
1 can kidney beans, drained and rinsed
1 cup spinach, roughly chopped
1 cup Daawat Elbow Pasta
Salt to taste
Freshly ground black pepper
Instructions

Heat oil in a pot and then add the onions. Add celery, garlic and red chillies and cook for 1-2 minutes.

Add mixed herbs and vegetable stock and cook for 3-4 minutes or until it starts bubbling.

Add the tomatoes and cook for 10-12 minutes or until the oil starts to separate.

Add the cabbage, kidney beans, spinach and salt and pepper to taste. Let cook for another 1-2 minutes.

Finally add in the pasta and add some more stock/water to your liking. Let cook for 8-9 minutes or until the pasta is cooked.

Serve hot with some garlic bread.
