Red Velvet Pancakes
Red velvet pancakes scream Valentine’s. And Valentine’s is round the corner. Make these yummy fluffy red velvet pancakes and serve with a scoop of vanilla ice cream or a cream cheese frosting. So delicious!
Ingredients
2 cups all purpose flour
3 tbsp cocoa powder
2 tsp baking powder
1/2 cup sugar
1/4 tsp baking soda
1/4 tsp salt
2 cups milk
2 tbsp vinegar
2 tbsp vanilla essence
2 tbsp red food coloring gel
2 eggs
1/4 cup butter, melted
Butter, to grease the pan
Dairyland Vanilla Ice Cream, to serve
Instructions

In a bowl, sift together flour, cocoa power, baking soda, baking powder, salt and sugar.

In another bowl, pour the milk and vinegar. Stir and let sit for 2 minutes.

Add the vanilla essence, melted butter, food coloring and eggs. Whisk until combined.

Empty the dry ingredients into the wet and whisk until well combined.

Tip: use a 1/3 cup measuring cup to scoop the batter. This will give you even sized pancakes. Grease the pan and let heat up on a medium flame.

Pour the batter in the centre of the pan and let cook for 1 minute. You should see bubbles form. After 1 minute, flip the pancake and cook for 30 seconds.
Tip: Temperature of the pan is key. If the pan is too hot, the pancakes will become dark without cooking all the way. It helps to cool down the pan using a wet tissue after each pancake to maintain the temperature.

Serve with a scoop of vanilla ice cream.
