Tropical Pineapple Crumble
Who says Pineapple Crumble is a dessert to be made during the cold weather? My version of tropical pineapple crumble topped with a mixture of oats and crushed coconut cookies is a dessert you can have all year round. It is so simple to make and so delicious with a scoop of plain vanilla ice cream.
Ingredients
2 cans pineapple (1 litre)
1 1/2 tbsp corn starch
10 pieces NuVita Coconut Cookies
1 cup oats
1/2 cup wheat flour
2 tbsp sugar
1 cup cold water
1/2 cup cold butter, cut into small cubes
Serve with Vanilla Ice cream
Instructions
1
Empty out pineapple into an oven proof dish and layer it flat. Mix in corn starch. This will thicken the base since pineapple releases more liquid when baked.
2
Crush the cookies in a plastic bag using a rolling pin or the back of a flat pan. Empty into a bowl.
3
Add the oats, sugar and wheat flour and mix. Add the butter and using your hands lightly incorporate into the mix. The mixture should resemble slightly wet crumbs.
4
Layer the crumble mixture over the pineapples and bake at 180C for 22-25 minutes.
5
Serve hot with a scoop of vanilla ice cream.
Nice meal….what a good way to get away from the usual Kenyan meals.
Hey, please would you correct the mistakes in this recipe.
You mention cold water, cut into cubes.
You layer the crumble mixture oven pineapple.
Is it actually a cup of butter? or is it cold water.
Hi Susanna, thank you for pointing it out. The recipe has been edited. Enjoy 🙂
