Tuna Fish & Brown Rice Cakes
Home-made fish cakes are so much better than store-bought. For one, they contain less artificial ingredients and secondly, home made are just more healthier using fresh ingredients and whole grain options. These Tuna Fish & Brown Rice Cakes are bold and richly flavoured. They are not just your typical fish cakes.
Ingredients
2 tbsp oil
1 tsp garlic, chopped
1 cup green beans, chopped
1 tbsp spring onions, chopped
1 cup Daawat Brown Rice, cooked
3/4 cup cheddar cheese, grated
3 tbsp coriander leaves, chopped
1/2 cup plain flour
1 can tuna, shredded
1 egg
Salt to taste

Heat oil in a pot and add garlic, green beans and spring onions. Stir and let cook for 1-2 minutes.

In a large bowl, combine the brown rice, cheese, coriander leaves, flour, tuna, egg, salt and cooked green beans.

Rub some oil onto your palms and place 1 tbsp of the mixture on it. Roll into a ball and slightly press to form little fish cakes. Place each cake onto a baking paper on a baking tray.

Bake in a preheated oven at 200C for 12-18 minutes.

Squeeze some lemon juice over the fish cakes and enjoy!
